GRILLED BOK CHOY WITH SPICY SAUCE

Bok Choy is now readily available in most grocery stores with a decent produce section. When properly cooked, this is a wonderful crispy vegetable that is filling and satisfying. I have found this preparation to be very appetizing and popular.

5 heads of mini bok choy, cleaned and sliced in half lengthwise
1/3 cup rice wine vinegar
2 tablespoon garlic chili sauce
½ cup vegetable oil
2 scallions chopped
1 tablespoons sesame oil

1. At least 20 minutes before grilling apply an even layer of olive oil over both sides of each bok choy half and salt and pepper to taste on both sides.
2. In a bowl, combine the vinegar, chili sauce, and oils, whisking with scallions
3. Preheat the grill to medium high. A gas grill should get to 425-450 degrees
4. make sure the grill has been sprayed with an olive oil or canola oil film to properly lubricate the rack
5. When the grill is hot, Place the bok choy directly on the bottom rack, flat sides down for 3 minutes.
6. Turn the bok choy and grill for an additional 1 minute, then dress with sauce and serve
