Warm Spinach Salad

Ingredients
1 red onion, sliced
5 slices bacon, chopped
2 tablespoons minced shallot
½ cup cider vinegar
½ teaspoon sugar
1 teaspoon dijon mustard
1 pound fresh spinach leaves, cleaned and spun dry
1 tablespoon olive oil
salt and pepper


To Make...

1. In a large skillet, cook bacon until it is crisp, then place on a paper towel to drain.

2. In the bacon fat, cook the shallot and onion for one minute.

3. Add the vinegar, sugar, mustard, oil and salt and pepper to taste.

4. Bring to a boil, pour over the spinach and toss with the bacon
