GRILLED ARTICHOKES

I love the charred flavor of perfectly grilled vegetables. This recipe is one of my favorites. It seem like a lot of work, but it really isn't.

You'll need a vegetable steamer

Ingredients

Artichokes
Olive oil
Salt & pepper

 

To Make...


1. Trim the artichokes by removing the stem and cutting the leaf tips.

2. Boil water in your steamer.

3. Once the water boils, add the basket filled with the artichoke(s). Cover.

4. Steam the artichokes for 30 minutes. Remove the from the steamer and allow to cool.

5. Using a very large, sharp knife, cut the artichokes in half, lengthwise.

6. using a spoon, scoop out the sharp, spiny weed-looking frawns located at the base of the choke, near the heart.

7. Drizzle the artichoke halves with olive oil, sprinkle with salt and pepper to taste.

8. Pre-heat grill at high heat.

9. Once the grill is hot, Place the artichokes, face down over the heat.

10. After 2 minutes, turn so that the leaf side is facing the grill.

11. After 2 more minutes, serve
